Perfect for a rainy Sunday afternoon is this delicious and colorful dessert with yogurt, pomegranate, pistachio and honey.

While the rain – again – is pouring down outside I was in need of a sunny dessert. Some color and Mediterranean flavors would be a real pick me up in these dark days… I’m normally not a person who complains about the weather a lot (but hey, keep into account that I am Dutch and the Dutch are notorious when it comes to the ‘weather talk”) but really…. where did the summer go?? In any case, whatever the weather situation this would be an absolute perfect little dessert. It’s quick and it’s delicious. I had some pomegranate left over from my Indian salad from yesterday which is now featured on Kay’s blog (hop on over!)

What’s not to love about this yogurt dessert

In the original recipe they added rosewater, but I’m really not a big fan of rosewater so I just ommited that and I didn’t miss anything. But because this is fairly neutral in taste you could add something else. Just make sure to not add any sugar to the yogurt mixture as the honey makes it more then sweet enough. It’s literally 5 minutes to whip this dessert together and I think it looks very festive and summery.

Yoghurt with pomegranate, honey and pistachio

Yield: 2

Prep Time: 5 mins

Cook Time: 5 mins

Total Time: 10 mins

Ingredients:

  • 210g greek yogurt
  • 125g Whipping cream
  • 1 handful pistachio nuts (roughly chopped)
  • a few tablespoon pomegranate seeds
  • 4 tablespoons Honey (approximately)

Directions:

Take two glasses and pour some honey in the bottom of the glass. You will want a bit of a layer but not too big as it makes is fairly sweet.
Put the yogurt and the whipping cream together in a bowl and whisk until it is thickening a little bit. You don’t want it to be too runny as it will sink into the honey if it is.
Carefully spoon the mixture on top of the honey.
Add another small layer of honey on top of the yogurt and spoon the pomegranate seeds and the pistachio’s on top.

    Oh Simone – those colours just pop out at me!! Too gorgeous – both the colours and the flavours (that translucent honey in the base of the glass is fantastic). And yes, where the hell did summer go?? It certainly isn’t here in London… :( Sigh.

    This was seriously so yummy!! I wasn’t sure my husband would really like it because he isn’t a huge fan of honey, but we have been eating a bit healthier and this was much healthier than a lot of things we can eat for our sweet tooth…anyway, it was a huge hit! I absolutely loved it and he said he really liked it. Mustn’t pass this up!
