Is it the punishment for loving food, that at some point in your life you look into the mirror and you realize that … well… you could do with losing a few kilo’s? More then a few would be a better description..:)
Ofcourse you can punish yourself even more and start a crashdiet. Bad for your temper, bad for your health and in the end, possibly bad for your weight as well… O what are we to do??!!
I figured that not eating is simply not an option. I’ve tried the famous “Sonja Bakker-diet” but trust me that is just sooooooo boring. It’s easy and it works, simply because you get to eat roughly 1000 kcal a day, which to me is just too little for any healthy human being. It probably works for people who don’t like to cook and don’t like to think about it either, but for me I can survive for one week but then I have to have some real food.
Anyway…. to make a long story short; something has to be done or else…
On the positive side; I spend a great deal of my time already going through cooking magazines and books, so the only difference now being that I also watch what the calorie-count is saying below each recipe. And voila, homemade “diet”, which is really just healthy and sensibly eating, doing enough exercise and not eating too much!

So for lunch today I decided I was gonna try a vietnamese carrot salad which is low in calories (only 147 kcal, so you get to eat something else for lunch as well..) and you can tell that it is very healthy.

Vietnamese carrot salad

Yield: 4

Ingredients:

2 limes, 1 juiced and 1 cut into cheeks to serve
3 tbsp fish sauce
3 tbsp sweet chili sauce
root ginger, 2 cm chunk finely grated
3 large carrot, finely shredded
1/4 white cabbage, very finely shredded
peanuts, a handful, toasted and chopped
mint a large bunch, chopped

Directions:

Mix the lime juice, fish sauce, chilli sauce and ginger. Add the carrot, cabbage and mint and toss. Sprinkle with peanuts. Serve as a side dish

Now for the observant watcher you can see that there are peanuts and mint missing in my photo. And that is correct as the supermarket had run out of mint (disadvantage of doing grocery shopping on the monday) and I had forgotten the peanuts. They were on my list, but I got sidetracked after I couldn't find them at first and then I totally forgot about them untill I was in the studio and did not feel like going out to search for peanuts. O well, I substituted the mint for the basil. To be honest only for the photo as it needed something green. And I added a few spring onions and red pepper to spice it up a little bit and voila. Not bad next to my cheese sandwich!
