It’s summer!!! Well, it is officially today right? June 21st is the start of our summer season here on the northern hemisphere or so it should be… Instead the forecast are telling us, no warning us, that bad weather is on it’s way. Storm, torrential rains and possibly hail are expected later today. To be honest if I look outside (and it’s 5 pm at the moment) it doesn’t look like that is gonna happen. It’s windy yes, but no rain, no storm and no hail. But I shouldn’t say anything or maybe I should actually go outside and make sure my strawberries and tomatoes are safe!

Talking about tomatoes; they are the star in today’s delicious recipe. I have been religiously following Michelle Bridges nutrition plan, so I have been eating actually pretty good food, but you know me… After following someone elses recipes for a while, I start to feel a little restless. And I have been slipping more of my own stuff in between too. I am at the stage where I know a bit what is expected so it feels safe to make some other choices… ;) Now obviously halloumi is not very low in calories but it is so yummy that you really only need a little bit of it to be satisfied. And with all the greens I think it makes for a perfectly healthy salad.

It’s already week 3 into the program and as I understood it, it is historically the hardest week to get through. The glamor has worn of a little and every day life can get in the way. To make matters worse, this week was the week where I had to shoot cakes almost every day! But I am happy to tell you that I stayed strong! I did not eat one single thing of the sweet stuff. Well maybe I licked my fingers once or twice when moving something but that’s it.

 I had a much harder time today when I had to bake chocolate muffins myself…. The smell of chocolate alone, almost made me cave in, but then I thought how hard I would have to exercise to get rid of those calories… That was enough to make me eat a few strawberries instead. ;)

And let’s face it, a delicious salad like this is really not a punishment now is it? 7 kilo gone (11 since the beginning of the year) !

Tomato rocket and halloumi salad

Yield: 1

Prep Time: 10 min

Ingredients:

  • 1 handful rocket
  • 2 handfuls tomatoes (I used cherry tomatoes in different colours)
  • 4-5 radishes (chopped into slices)
  • 40g halloumi
  • sunflower oil (to fry the halloumi)
  • 2 teaspoons lemon dressing (I used a bottled one from bio bandits, which is organic and I love the flavors!)

Directions:

Heat a small layer of sunflower oil in a frying pan and make sure it is hot enough. To check tip in a small cube of bread. if it browns within seconds the oil is hot enough.
Add your halloumi cubes and fry them quickly until golden brown. Remove from the oil with a slotted spoon and leave to drain on kitchen paper
Cut your tomatoes in half and slice the radishes. Toss all ingredients together in a bowl, add your dressing and the halloumi cubes and dive in!

    Halloumi is my favorite cheese, we eat it a lot back home. But it’s hard to find in the U.S and if I find it it’s very expensive. Your salad made me crave it. I can’t wait to go back home in a month and have delicious melted halloumi sandwich.

      Halloumi is not so easy to find here either. I have a source in Amsterdam where I can buy it and since it keeps so long I always stock up on it. Looove halloumi!

    Congratulations on your weight loss and staying strong. I just had tonsillectomy and lost 6 kilos already. Still can’t eat correctly or taste much 21 days later. I am telling you, this surgery has been the perfect diet.

    Am surprised! Did not know ‘our’ Michelle Bridges had ‘reached’ the US – yes, am from the Land Down Under :) ! The lady can be a pretty hard taskmaster on our ‘Biggest Loser’, so, daresay her programme would be somewhat of a challenge to follow! Good luck with it!! Love haloumi and do salads like this in summer – it is widely available here plain and with a number of additions, organic or ordinary: a fair block sets one back about $5-6, so a tad more expensive than ordinary local cheeses, but nowhere as much as those imported from Europe.

    Gefeliciteerd! Elf kilo is VEEL. Echt heel goed van je. Klinkt behoorlijk ingrijpend zoveel sporten opeens. Een heel ander ritme krijg je dan volgens mijn.
    Je salade ziet er lekker uit.
    Ik hoop dat jullie snel een lekkere zomer krijgen. Hier is de warmste tijd van het jaar alweer voorbij; het regent nu veel en omdat we in de bergen wonen wonen we met ons hoofd in de wolken. Soms zie je hele dagen niks, maar als je de wolken aan de bergen voorbij kan zien trekken is het wel weer heel mooi. Heel veel succes nog met je programma en met het van de cakejes afblijven :)
