<p>I walk through the isles of the supermarket and for the first time I really see how ridiculously expensive everything is. Not that I shopped blindfolded before, but we&#8217;ve always been in the somewhat luxurious position of not having to count every penny we spend. And especially when it comes to food we don&#8217;t really pay attention if something is maybe 10 cents cheaper then the brand next to it. But ever since<a href="http://www.wisewords.ie/" target="_blank"> Mona</a> started her l<a href="http://junglefrog-cooking.com/spicy-bean-soup-with-cuminpooris-living-leaner/" target="_blank">iving leaner</a> challenge that has all changed. I have renewed respect for the people that manage to live of a salary half that of ours and have four (or more) mouths to feed too. I feel spoiled and somewhat embarrassed for having lived so recklessly before.</p>
<p><span id="more-4250"></span>It&#8217;s also coming at a perfect time for us to be looking more at our spending pattern. Tom is without a job and while he still gets paid until the end of the year, finding a job has so far not been easy. And December is historically the worst month of the year to find a job anyway so it&#8217;s not very likely that he will succeed before the end of December. That also means that as of January our income will dramatically decrease. Neither of us have never been out of a job before. Well I think I was at the age of twenty for a whole month.. but that doesn&#8217;t count. Tom doesn&#8217;t like it. Gets terribly frustrated that he can&#8217;t find anything.</p>

<p>And that is understandable but I think we will somehow get through this and come out stronger at the other end. I will be glad that 2011 is about to end as it has been the worst year ever with loved ones dying, holidays cancelled due to earthquakes and other reasons, Tom losing his job&#8230; lol.. you would get depressed over less. Still in the grand scheme of things I do realize that there are tons of people who scrape by on far less and are in situations I hope to never be in, so it&#8217;s all relative. And I&#8217;m a positive person so all will work out in the end!</p>
<p>But to come back to the topic at hand; we&#8217;re having a fun time trying to eat for under the 10 euro and sofar it&#8217;s going fine. We&#8217;ve had to make some choices which we would otherwise not have made but also some delicious meals as a result of that! This pumpkin meal is another delicious one and coming in at € 7,37 for the meal but it will feed us for two days I&#8217;m sure.</p>

<p>Used out of existing supplies are all the spices and the quinoa so that would be a big dent in the budget but they do last for quite a while normally. In the photos the sausages are not appearing as they weren&#8217;t ready yet but trust me if I say they go well with this otherwise vegetarian meal. So leave them in or out (leaving them out would make this even cheaper!)</p>

<li class="ingredient">1 cup water</li>
<li class="ingredient">1 14 1/2-ounce can diced tomatoes, drained</li>

<li class="instruction">Heat oil in large saucepan over medium heat. Add onion; sauté until soft, stirring often, about 5 minutes. Add garlic; stir 1 minute. Mix in paprika and next 8 ingredients. Add 1 cup water, tomatoes, and lemon juice. Bring to boil. Add squash and carrots. Cover and simmer over medium-low heat until vegetables are tender, stirring occasionally, about 20 minutes. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and chill.)</li>
</ol>

<li class="instruction">Rinse quinoa; drain. Melt butter with oil in large saucepan over medium heat. Add onion and carrot. Cover; cook until vegetables begin to brown, stirring often, about 10 minutes. Add garlic, salt, and turmeric; sauté 1 minute. Add quinoa; stir 1 minute. Add 2 cups water. Bring to boil; reduce heat to medium-low. Cover; simmer until liquid is absorbed and quinoa is tender, about 15 minutes.</li>
<li class="instruction">Rewarm stew. Stir in half of cilantro and half of mint. Spoon quinoa onto platter, forming well in center. Spoon stew into well. Sprinkle remaining herbs over.</li>
<li class="instruction">*A grain with a delicate flavor and a texture similar to couscous; available at natural foods stores.</li>

<p>When the alarms rings at 7 am I am already awake. Not wide awake but my dear old kitty friend <a href="http://www.flickr.com/photos/junglefrog/sets/72157626917469971/" target="_blank">Gizmo</a> usually thinks that 6 am is a perfectly fine time to wake up and get fed. So around 6-ish she starts walking over my head, all the while miauwing loudly. She is getting a little deaf at the age of 19 so she doesn&#8217;t hear her own voice anymore&#8230; Annoying to say the least. So she wakes me up but I refuse to get out of bed before the alarm goes so I stubbornly ignore her, but it&#8217;s pretty obvious that any real sleep is not an option anymore.</p>
<p>Outside it is still dark and I can hear the wind howling around the house, telling me that I should stay in bed, but unfortunately duty calls so a little past 7 (snooze button!!) I swing my legs over the edge and go and feed a screaming cat (who then eats one tiny bit and follows me into the kitchen, so she can annoy me a little bit more. <p>The wind and rain keep it up the entire day and it is one of the first autumn days that is grey, dreary and mostly very wet. It&#8217;s a good thing that I do not suffer from autumn depressions but I can see how it easily would effect people that are more prone to weather changes. Me, I love autumn. I think I can safely say that I&#8217;m a season-girl. I love all seasons. I am not even sure I would like to live in a country where the sun always shines. That would be boring now wouldn&#8217;t it? Autumn is such a wonderful and comforting season. The season to snuggle up indoors, while the rain pounds on the roof, warming your hands around a mug of hot chocolate (preferably with whipped cream ofcourse) and gorgeous glorious stews.</p>
<p>Needless to say on that very first very real autumn day, my mind immediately went to<a href="http://junglefrog-cooking.com/beef-stew-pumpkin-beer/" target="_blank"> stews</a>. I had recently bought a bag of puy lentils (more lentil recipes <a href="http://junglefrog-cooking.com/roasted-butternut-squash-salad/" target="_blank">here</a>, <a href="http://junglefrog-cooking.com/puy-lentil-cherry-tomato-haloumi-salad/" target="_blank">here</a> and <a href="http://junglefrog-cooking.com/chicken-lentil-sweetcorn-chowder/" target="_blank">here</a>) so I figured I should make something with them and searching on the <a href="http://www.bbcgoodfood.com" target="_blank">BBC Good Food</a> site (my favorite recipe site) I quickly found the recipe for this delicious stew. The ultimate comfort food! We had it with baked potatoes but I think it might even be better with a nice potato mash. O or a potato/celeriac mash&#8230; Hmm, gotta try that next time!</p>

<p>Last friday it was that time again; time for our Black Box challenge.. <img src='http://junglefrog-cooking.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  It was Tom&#8217;s turn to fill the box, my turn to cook. I had been working at a wedding the entire day on friday so I was slightly exhausted when I came home, but ofcourse I could not wait to see what was in the box. Tom was doing the cooking on friday, so the only task I had to do was to open the box&#8230; And some interesting ingredients again! They are a bit wintery, although Tom insists that is only because of the dishes I chose to make with them, but well, maybe you have some other ideas of what I could have made but here are the ingredients! O and my cooking was done on Saturday in case you were wondering&#8230;</p>

<p>Have you ever seen Jerusalem Artichokes?? I hadn&#8217;t so I was a little confused as to what weird thing I was holding in my hands and then that huge white Daikon got me a little confused too. I mean; mushrooms I can handle and/or recognize in most cases but those first two ingredients got me a little puzzled. The same actually was true of the veal shank. I could tell it was some sort of shank as it was pretty clear by looking at it, but I had never cooked with any shank before and so that was an interesting thing to handle. Despite the wintery ingredients it didn&#8217;t take me too long to figure out what to make and a little browsing on the internet always helps in making sure you know what you&#8217;re cooking with.</p>
<p>So what did I make? I made as a starter a Cream of Jerusalem Artichoke soup which was delicious, for a main I made Braised Veal Shanks with mushroom and daikon risotto and for dessert it was a tiramisu with eggnog.</p>

<p>I loved the soup and the recipe is very simple and straightforward. The taste of it was fairly neutral so perfect for a little appetizer. I was a little disappointed in the risotto. I mean; I make a lot of risotto&#8217;s as I think it&#8217;s such an easy dish to prepare but the taste of the daikon in the risotto was not the best choice. I think I should have seasoned it better overall. Definitely not a winner here. The braised vealshanks on the other hand were delicious. I braised them for a couple of hours in the oven (with carrots, onions, wine, celery and garlic), then removed them from the Dutch oven I baked them in and let the sauce reduce further to the right thickness and then added some mustard in at the end. The meat was tender and fell of the bone very easily.</p>
<p>The dessert was delicious. However the cookies I used as a base instead of the normal ladyfingers were macaroons (not macarons!) Or at least that seems to be the proper English translation for it. We call them bitterkoekjes&#8230; They got a little tough due to all the moisture. I will definitely be using amaretti or ladyfingers for next time but I did like the taste of the mascarpone mixture that went in it. I&#8217;ll give you the recipe below with the use of amaretti instead of macaroons.</p>

<li class="ingredient">2 dl whipping cream</li>
<li class="ingredient">16 amaretti cookies</li>
<li class="ingredient">2 dl strong coffee</li>
<li class="ingredient">1 tsp vanilla essence</li>
<li class="ingredient">50 gr of sugar (or less if you prefer)</li>
<li class="ingredient">1,5 dl Dutch Eggnog</li>
<li class="ingredient">50 gr white chocolate (to grate over for serving)</li>
</ul>

<ol>
<li class="instruction">Put the coffee in a shallow bowl and let cool.</li>
<li class="instruction">Whip the cream with the sugar and vanilla essence to stif peaks.</li>
<li class="instruction">Using a fork wish the mascarpone until smooth and fold the cream in.</li>
<li class="instruction">Add the Dutch eggnog to taste. I think I used more then the required 1,5 dl as I thought the taste was not strong enough yet but it depends on personal preference&#8230;</li>
<li class="instruction">Dip the amaretti cookies in the coffee and put them in the bottom of 8 small glasses. If the cookies are too big break them up as needed. Add one layer of the mascarpone mixture on top of the cookies and repeat this once.</li>
<li class="instruction">End with a layer of mascarpone and put in the fridge for at least 4 hrs or preferably overnight.</li>
<li class="instruction">Before serving grate some white chocolate over the top</li>

<p>There is something so comforting about typical fall food. It&#8217;s the smell, the colors but above all the taste that make it so. When I read about the three ingredients for the Royal Foodie Joust I just had to participate. It&#8217;s my first time in the Joust and I am not a star in making up my own recipes, so I figured that this would be a perfect opportunity to start practicing!</p>
<p>The three ingredients for this months joust where in the colors of Halloween; black and orange and the ingredients itself would be pumpkin, beer and sugar. So sitting with Tom in bed on our regular weekend &#8216;breakfast in bed&#8217; we started brainstorming on what we could make with those three ingredients and it was Tom who actually came up with the idea to make a stew out of it (see honey, I promised I would give you all the credits!!) and the rest was really fairly simple.</p>
<p><img class="alignleft size-full wp-image-1391" title="20091018-1496" src="http://junglefrog-cooking.com/wp-content/uploads/20091018-1496.jpg" alt="20091018-1496" width="413" height="620" />I had never before used pumpkin to cook or bake anything, so the first thing we had to do was buy a pumpkin. We went to the Noordermarkt in Amsterdam where they have a lovely organic market, so that is where we bought pumpkins (yes, I bought two different ones, so expect at least one more pumpkin recipe soon!) and organically produced beef for our stew. For the beer  wanted to use stout as that is dark and lovely and all the other ingredients I still had in the kitchen so here is the recipe that we made:</p>
<p><em><strong>Beefstew with beer and pumpkin (serves 2 or 3)</strong></em></p>
<p>350 gr. beef</p>
<p>30 gr butter</p>
<p>4 small onions</p>
<p>Half a medium sized pumpkin</p>
<p>200 gr round carrots or another vegetable you like</p>
<p>1 bottle of Stout or another dark beer</p>
<p>5 cloves</p>
<p>1 pcs of mace</p>
<p>2 bay leaf</p>
<p>1 cinnamon stick</p>
<p>sugar to taste</p>
<p>Serve with mashed potatoes or rice (we picked the mashed potatoes)</p>
<p>Cut the beef in chunks of about 2 cm and put pepper and salt on them. Put the butter in a casserole pan and once the butter stops foaming add the meat. Bake the meat for about 10 minutes on medium high till it is browned.</p>
<p>2. Cut up 3 onions in rough pieces and add them to the meat. Bake for another 5 minutes. Add the bottle of beer.</p>
<p>3. Stick the cloves into the remaining onion (you can leave it whole, it will fall apart anyway) and add this together with the mace, bayleave and cinnamon stick to the meat. Bring to a boil, add pepper and salt and sugar to taste. You don&#8217;t want it to be overly sweet. Put a lid on the pan and simmer for approx. 2 hours. Add the carrots in and simmer for another half hour before you add the pumpkin. Simmer for another half hour and check if the meat is fall apart tender and the pumpkin well done.</p>
<p><img class="alignright size-full wp-image-1392" title="20091018-1492" src="http://junglefrog-cooking.com/wp-content/uploads/20091018-1492.jpg" alt="20091018-1492" width="413" height="620" />You can add potatoes to the mix together with the pumpkin and have a one pot meal or you can make mashed potatoes and serve those on the site. Sprinkle some freshly grated nutmeg over the mashed potatoes!</p>
<p>You can easily make this dish the day before as the flavors will only get better after a day.</p>
<p>I could see endless variations of this dish really and the pumpkin and sugar give it a nice little bit of sweetness. While simmering on the stove the smells that came of it where delicious!! Especially the cinnamon was very noticeable. I did detect a very slight bitter aftertaste to the dish, which I somehow feel might be because of the cinnamon but not sure.</p>
<p>In any way, we were both really really pleased with this lovely stew and will definitely be making this again! Perfect for a rainy and stormy autumn day (well, it&#8217;s sunny here today&#8230; <img src='http://junglefrog-cooking.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  ) but you know what I mean.</p>
