In the summer, I eat caprese salad almost once a week! Making a fresh sandwich variation is a good idea – a panini is also nice (although less appropriate for these summer days). I have a recipe for a caprese lasagna, not hard, if you use store bought pasta. I did homemade to get color, but you could easily layer, cheese, thin tomato and pasta. Done. Sure, tuck in some basil. P.S. I even eat soup in the summer, so turning on the oven is something I’m known to do even in August. I’m not sure where you are flying to, but have a wonderful vacation. [Reply]

A nice twist on a classic dish! I think your approach to dieting is very sensible. I posted recently about my own once-difficult relationship with food, and while I don’t consider myself to have had an eating disorder, I do understand how eating, weight, and the need for control can be linked in one’s mind. Even now, if I find that I’ve gained a pound or two (not necessarily from overeating, but because my weight, like most women’s, fluctuates a little), I feel a hint of frustration, from feeling unable to control my body. The good news is, I get over it much more easily than I used to, and I continue to eat well every day. Food is not something we should feel miserable about – your post reminds us all of that. So, good luck to you, and keep up that good attitude! [Reply]

I love it when people say they can get their figures back in a week or a few days….gosh it will take me weeks yes…..52×3 to get mine back!!! My sister had anorexia, it is a very bad disease…the skinny appearance is just the symptoms though.The sickness is very deep rooted!!! I’m supposedly on a “diet” too. HAHAHA! I don’t do well on diets. I find that cutting back on portions and trying not to snack are the things I need to work on when I’m trying to lose some weight. I snack all the time. Very very bad habit. [Reply]

Good luck with the diet! My little advice would be to stay away of carbs in the evening and have them for lunch instead. Some lean protein (I usually do not measure and eat as much as I want) with salad or vegetables is better for dinner and lighter on your stomach too! What a lovely lunch! I love the colour of the fresh greens! I’ve also noticed the weird extreme opinions concerning Jamie: some adore him, others can’t stand him. I have to admit I haven’t seen or read enough of him to have a real opinion. He seems nice, and any recipes of his that I’ve come across seem quite good – that’s all I can say for now.
