 It doesn’t really happen very often that I use a recipe to make pasta. To me it is just the perfect meal when we need something quick, tasty and want to use whatever we have in the fridge or closet. So that is also the way that this fettucini came to live…. It’s hot here...

That looks so perfectly delicious!!  I am not sure how the temperatures are in the rest of Europe but here in Holland it has reached rather high numbers. Yesterday was the worst with 37°C (98°F) and while today is a little less hot; it’s still in it’s thirties… Not even Italy was that hot! And the problem here is that... 26 comments

I have the cookbook. I will look it up. I have been to Italy a lot. Interestingly. I find when I travel – especially in the bigger cities – that all cities are now multicultural. That is the basis of Canada – and what I love about it – but you are so right. When I travel, I want to be immersed in a specific culture, and feel it. I want to eat its food without having to research ahead to see what it is and where I can still find it. But, those days are gone. When we were in Amsterdam, we had the hardest time finding some authentic Dutch food – and I love the multicultural vibe in the city … but, I wanted Dutch food! SO, I can relate to your comment about tourism. All that being said, when in Firenza – you must go to the indoor food market in the old town. Ask what the local meat is. A couple of places sell it – a cured meat – I cannot recall its name. Taste the freshly preserved garlic cloves. Make sure you buy a big bag of beautiful dried porcini – but check around first, the prices do vary. Watch what people are eating. There are some places that you can buy a little lunch there that are so authentic it will knock your socks off. You probably know this, but all food labelled with DOP is the best. It is the official seal of approval for each area and each product that indicates it as the best… olive oil, tomatoes in cans… everything. As for the Dutch food you could not find; not sure if that is tourism related in this case, as Dutch food is really more home food and tends not to be eaten much in restaurants. Having said that; there is a new restaurant in Amersfoort (which is not too far from Amsterdam) which is specialized in the Dutch cuisine, so if you’re here again give a shout and I will take you there! I didn’t know that there are so many types of pancakes Simone! I think the first couple of pancakes are always too pale, but then the pan reaches the right temperature and the rest usually come out a good colour. I really like your new site. I have a smaller screen and it looks perfect. [Reply]

In North America – these are not called pancakes. A pancake is a lot smaller and fatter. These are called crepes in Canada, due to our French founding fathers. But, certainly, so many countries have a version of this great big flat pancake it is difficult for me to tell the difference when I travel… combined with the fact that what I buy may not be authentic, it is really tough. How is this different than a French crepe or a Balkan palacinka? The North American pancake is definitely not foldable. I was so confused to see this word in English and then find a crepe. But, I have learned. Maybe the difference is in the texture from the Blinz to your “pancake”? How do the recipes and technique differ? I find the Balkan palacinka is quite spongy in texture and the French crepe, as I know it, more dry. I would love to have the differences in these ethnic treats explained to me, too! Love that you are doing this cooking tour! [Reply] Simone (junglefrog) Reply: I think here in Holland, we simple just call them “pannenkoeken” or “crepes” which translates into pancakes. I know the ‘pancake’ in the US is the small and thick little one and we just call those “american pancakes”. But as you’re saying; I think a lot of the pancakes or crepes or whatever you call them around the world are fairly similar… Didn’t know there was a Balkan Palacinka… Gotta look that up too! [Reply]

A blitz is indeed simply a pancake but what makes it a blitz, in my Jewish opinion, is the filling! I am used to that good old traditional cheese blintz, tangy and not too sweet, smothered under a warm fruit sauce. Or filled with cooked fruit. I would also assume that, like many dishes that have evolved, it is indeed Jewish but brought from Russia with the Jews who immigrated west. According to Claudia Roden, the blintz is in fact of Hungarian origin. But aside from that, yours are perfect! This is really unusual, but I can see it happening… One of my favourite (very Belgian) meals is sausages with applesauce and mashed potatoes. And I know that in the US, they eat a lot of applesauce with their barbecued meats. And celeriac and apples sound like they would do well together. Sounds good! Excellent Simone, Bit on the thick side for the though, but hey its something different right? another nice thing I will be doing soon a lot again is char grilled water melon, you should try once…..cut few cm thick rectangles, char grill and top with diced tomatoes, maldon salt and some basil leaves……….perfect for summer! This would be wonderful with the celeriac. Great idea! I just made a pear soup the other day – simple as pie. Sauteed a little onion until translucent, added 4 pears and some chicken stock and let it simmer. I pureed it and seasoned it with salt and pepper.
