 My last failed attempt at making macarons has been a while ago and was for the Daring Bakers in october. So when Jamie and Deeba started their MacAttack I could not stay behind! My goal, obviously, to finally produce a decent batch of macarons. One that I would be able to serve to other people...

Hi there, beautiful job on your macarons! I am doing the mactweets thing too (I’ll be posting them tomorrow). They came out nice looking, but to be honest, on the inside, they were hollow. Did you have this problem too? If not, any advice? [Reply]  Simone (junglefrog) Reply: Hi, I will check your post out tomorrow. Mine were not hollow, but I think I had that issue in a previous batch. Did the bottom stick to the baking paper or did they come out allright but were they still hollow? The issue I had previously that I did not leave them in the oven long enough, so when I took them of the paper they ended up hollow. I am not really a mac expert so maybe Jamie can answer your question better..? [Reply]

Oh, yay! I’m so glad you managed to find your perfect technique! They look wonderful, beautiful colour! I made a chocolate one recently, and it wasn’t 100% perfect, but still good enough. And I have to make lemon ones for a friend’s party this weekend. I’m getting a lot of practice! [Reply]

God, I know what you mean. They have no feet AND they have cracked. Which suck if you have put all your energy into them! Macarons are becoming the legend of the blogosphere. They are notoriously hard to get right and everyone has a different tip to add. Anyway, I am not making them again, no-one likes them that much anyway, so it is too much effort for nothing. I love how pretty these are. I don’t like maracons, and I would think one would have LOVE them to go to such work. We have one french bakery here that sells them, and I find them too sweet for me. But you did a great job with what seems like a real true challenge. [Reply]

I even never dare try making macarons as the amount of sugar required. I ate macarons just once at a bakery and it was so sweet. It scares me when I see the recipe. If I reduce sugar, I am afraid that I would not get the proper result. Having “feet” is so crucial to macarons [Reply]

Simone,,I LOVE your pink shells with the lavender like blackberry filling. I remember pink and purple used to be my two fav colors as a little girl, and I think they look lovely together. Plus, the flavor sounds incredible…red currants too! Mascarpone with berries is perfection, as berries and cream is classic. I used it in my pumpkin filling..and YUM! All in all, beautifully done, and I definitely preferred Helen’s method and recipe over the Felemings..n contest! [Reply]

I can get feet but my colors fade during last half of baking. BUMMER cuz they were a beautiful shade of blue!! Blueberry w/ Meyer lemon buttercream. Not sure how they taste yet. Only second time making them. First attempt I just focused on technique and made simple vanilla. Would love to hear some possible reasons for the lack of color. THANKS!! [Reply]

I like that you’ve gone down the lemon route with these…what a shame they all didn’t work out. I’ve had four goes at them now and they never work, for one reason or another! AAaaah! (and I’ve followed Helen’s advice as well!) I might give the Italian version a go. We’ll see! But I do love your yellow macarons Simone! How strange I have just finished my first and 2nd attempts that these lovely desserts. Wow what an improvement these are great your research has paid off. It is a very satifying feeling to be able to pull these off. Congrats I had a big jump also between my first and 2nd batch and mainly for the same reason as you – not enough heat. Just read your post on my blog very strange exactly the same timing and thanks for the nice comments I will be doing some more soon but I want to try some ‘way out’ flavours like goat’s cheese with walnut/almond meal and cranberry filling and one with smoked salmon and cream cheese. Your macarons look fantastic! I agree that the french meringue method is much easier than the italian, although the italian gives that macaron texture much better. They honestly don’t look so bad! I know you probably used the nicest ones for the pictures, but really, it’s very good for a first attempt! Learning what the right texture of the batter is is the most difficult aspect, in my opinion: I still get it wrong often. I have made macarons with both French and Italian meringue (separately, of course), and it seemed like I got better results with the Italian version, so I stuck with it. But I know that a lot of macaron experts use French meringue with great success, so I think I will give that another try next time. Or, I’ll see how it works out for you. I don’t think I’ve ever managed to get my macarons to be all the same size. And I’m a disaster with a pastry bag, so most of the time I just spoon the discs onto the baking sheet… which leads to very homemade-looking macarons. Regarding the baking, I’ve always baked them at 180 degrees, for 8-10 minutes. And here’s a really useful tip for prying them off: line the baking sheets with parchment paper, and after the baking is done, take the paper off (with the macarons on it) and place it on a slightly wet surface. They will come off much more easily. Sorry if I’m offering redundant or unwanted advice: I just have a passion for these little cookies, even though they can be a real pain to make! But you’re off to a really good start, and I can’t wait to see your next attempt! Don’t give up! I bought a cookbook years ago for the macarons recipe, and I still haven’t attempted it. I live in fear of it. One of these days though. Looks like some of them turned out great! [Reply]

This is very weird I just finished my first batch of macarons using Helen of Tartelette recipe (using the French method)!!! It seems that macarons seems to make most people afraid very afraid and I was a little fearful also. Good soild effort on you first attempt. Will go over to your 2nd attempt and see how it went.
