Thanks Lisa! I didn’t actually buy the beets yet as I knew I wouldn’t be able to prepare them in the coming days but I will do so next week, so stay tuned for the results!

Simone, that salad looks abolsutely fabulous, and your photos just awe me..so incredibly beautiful! Would you believe I JUST started liking beets several months ago?? It’s so strange since my palate matured/expanded from the time I was in college, and there isn’t much I don’t lik…yet beets were one veg I just couldn’t get into. Now I love them, so I’m looking forward to your beet entry too!

That said, I’m in NYC and the surrounding areas, so not being able to find at least some fresh pomegranates or frozen seeds ‘anywhere’ is mind boggling! Then again, I can’t get out there myself due to my injury, but I did call tons of places – including middle eastern specialty markets – and not one had anything other than pomegranate juice! SO weird!

Simone, what happened to the layers? Anyway, your photo is lovely as always. You need to roast the hazelnuts first and the skin comes off real easy. In Greece we find them ready roasted, so we never have to do that. BTW I am impressed by how expensive hazelnuts are in general outside of Greece! In London I could not believe my eyes and almost decided against making the dessert, but my friend really wanted it.

I don’t really know what happened to the layers, but they kind of disappeared! I did make the layers (only two due to the missing caketin problem) but you don’t see them anymore. You can still taste them but not sure where I went wrong.
The hazelnuts were indeed quite expensive; it was 10 euro for the amount that I needed. What would that be in Greece?

This looks really tasty. One trick to making the paste is to keep processing — also, adding a little bit of oil will make the paste smoother. I posted a recipe for praline paste not too long ago.

Fabulous ingredients!
