I think the American “English” would refer to this dish as a frittata. What is great about this dish is that eggs are your foundation and whatever leftovers you might have can be added to this wonderful egg dish. This past summer during our vacation to the Netherlands, our friends often prepared this dish for lunch. Hope you will be able to relax soon. [Reply]

I’m sorry about your families – I’ve had lots of health issues, recently watched a close friend go through heart surgery and watched my grandparents go through cancer – its never fun. Hope they get better soon! This dish sounds fabulous – so versatile and simple! [Reply]

Simone, I’m sorry to hear that you’re having family health problems. It’s hard to deal with, especially when the telecom guys put their two cents worth in! (don’t get me started…) I love it that you still eat good food when you’re this stressed–you don’t fall back on PB&J. This recipe looks wonderful. It’s my favorite kind of food: use what’s there, what’s fresh, and keep it simple and quick. What’s better than that? I think Oeuf cocotte is like a poached egg, but in a container instead of ‘naked’ in the water. [Reply]

I am sorry to hear about the health problems your families are suffering from. Taking a break from cooking is always a good way to take care of other things that are more important. hey i agree with you, here in Hong Kong its now about 22 degrees and i am already complaining again…….too hot for me……soon it will be 33 degrees day and night again and i will be oh puhlease!. the only thing i dont complain about is cold and wet weather, i just love that. I also got a hole in my hands (both of them) but am happy to go dutch at meetings…..so a bit different Really like your picture here, nice light and focus and styling Simone! [Reply]

I love your observations on the Dutch. So funny! I think that I might have a “hole in my hand” too. The next time I do something “spendy,” I’m going to think of that phrase. This salad looks beautiful, and I love all of the protein lurking amidst the brightly colored beans. Yum. Good for you for going to spinning again. I’ll bet it is quite a workout! I’ve heard good things about spinning, but I haven’t tried it. I’ve been too busy with my recent kickboxing obsession to try anything new. This salad would be the perfect post-workout fuel!  My parents in law will be coming for dinner tonight and while we really wanted to do something daring and use some of the things we learned in our cooking class…. a thursday night just did not seem the perfect day to do something like that, so we are keeping it simple for tonight.

[Reply]  As I told you we had made fresh mayonaise at the cooking class last saturday but other then eating it with fries I couldn’t really come up with a good way to use it untill I read this by Julia as a guestpost on The Perfect Pantry and voila; here it is!!
