Raspberries with mascarpone cream… :)

Inspired by a recipe in goodfood I changed it a bit to include mascarpone and amaretti cookies. The original recipe had cake and some other things that I couldn’t find so changed it to be like this:

Just the way I like my desserts to be; quick and easy!
Ingredients
  • Raspberries
  • 1 jar of mascarpone cream
  • little sugar
  • amaretti cookies
  • any other cookie you like to put on the bottom of the glass. I used lady fingers
Instructions
  1. Add a little sugar to the mascarpone and stir it untill smooth
  2. Get a glass that you want to use to put the dessert in; I used a whiskey tumbler size. Put the cookies of your choice on the bottom of the glass and break them if you need to.
  3. Crush some amaretti cookies and stir them through the mascarpone cream. Crush some raspberries and fold them through the mascarpone. Don’t make it too even as it looks nicer to have some of the white of the mascarpone still come through.
  4. Add the mascarpone on top of the cookies in your glass. You can make layers if you want but not necessary.
  5. Top the glass with fresh raspberries and put a little icing sugar on top.

The dessert is rather heavy so don’t have it after a heavy meal, but after a light one it will work fine!

You won’t believe me, but I have never tried mascarpone in sweets – this looks so delicious!

You should really try it Patricia! I was thinking; they use it is tiramisu as well so it must be good in other sweet desserts!
