Puy lentil, cherry tomato and halloumi salad

I had been having this piece of halloumi in my fridge for quite a long time. it’s a good thing you can keep it for as long as I did, or I would have had to throw it out. You see, up until today I had never tasted halloumi. Read about it, heard about it, thought about it, but never actually ate it… But when I was going through the new issue of Olive magazine I saw this delicious salad; all with ingredients I had still lying around and therefore perfect for a Monday afternoon lunch. I have to leave for a photo shoot today at about 4 pm and will only be back late, so no normal dinner for me. I made that up by eating a healthy lunch. Now how good is that of me… :)

I am actually a little bit concerned about going away right now, as Witje, our oldest cat at the moment, is not doing very well and I am afraid it is gonna be the end of the line for her. The problem with having cats that are all only one or two years apart in age, is that they all grow old at more or less the same time. It’s not too long ago that we had to bring Joepie away and now it looks like Witje is going to be next. She might still recover; it’s not so bad that I have to rush her to a vet, but I have this gut feeling that if I take her to the vet, I will not be bringing her home. We’ve been constantly keeping an eye on her over the last couple of days but it’s almost as if she is growing older by the hour. I remember when I went to the vet with her three months ago, for a checkup and to have her nails cut, and they were amazed at how well she looked for a cat her age… And she did at that time, but it’s amazing how quickly that can chance…

Will see what tonight brings… Fingers crossed that she starts to feel better. I just hate it when this happens!!!

Ingredients
  • 250 gr cherry tomato, halved
  • 1/2 finely sliced red onion
  • 1/2 crushed garlic clove
  • juice of 1/2 lemon
  • 1 tbsp of olive oil
  • 150 gr puy lentils
  • 250 gr haloumi
  • fresh cilantro (coriander)
Instructions
  1. Half the tomatoes and toss them with the garlic, onion, juice of 1/2 a lemon and the olive together in a bowl.
  2. Cook the lentils for about 15 minutes or until tender, drain and add to the bowl. Season and toss.
  3. Chop 250 gr halloumi into cubes and fry in a splash of oil until golden. Stiry roughly chopped coriander through the lentils and serve with the halloumi.

    Oh, I hope Witje will get better… I know how sad it is when a pet grows older.

    I love the colours in this salad. Usually, I associate lentils with heavy winter meals, but this is perfect for spring!

    Oh that is so sad about your cat :-( I know how it is realizing that we must part with a beloved pet and it is heartbreaking! I hope it all goes smoothly whatever happens. But your work is going so well these days and you are obviously keeping yourself feeling good with all the wonderful healthy salads and such I’ve been seeing on your blog lately.     Where are you going? You said you didn’t feel good going away right now? The salad looks lovely. Do you know how long you can keep that cheese because your story is exactly mine. I have had the cheese in the fridge forever, never tasted it, always wanted to…
    Yet, the most important, is your cat. Kate in the Kitchen just lost her cat and has really been struggling with her loss. I have never been able to have pets since I had children, as one was allergic to dander. As a child, I would be everywhere with my dog. My parents still have a little dog (my baby sister, of course), so I completely understand your sadness. And,am very sorry you are going through this right now.

    I’ve never heared of haloumi before either, I’ll have to look that up. And I am so sorry to hear about your kitty :( You know I love cats too and when they get sick it’s the saddets thing. Hopefully she gets better soon :)

    I hope everything turns out well for your cat. It is always very traumatic to loose a pet and I can imagine how difficult it must be for you to leave her right now. The salad looks lovely and very healthy, although lentils are not my favourite thing in the world.

    Okay Simone, just wanted you to know praying hard that you have Witje awhile longer. I know how hard it was for you when you lost Joepie. I had the same experience before leaving for Europe – my dog in the Philippines, Feliz had an emergency operation but luckily she is better now.

    Simone, I’m sorry to hear about your cat. We lost our last one just before we moved to Belgium. Now we travel too much to keep one, and I really miss that cat energy in the house. Plus the almost daily belly laughs that our last one gave us.

    I’m going to have to google haloumi. Not sure what it is! But this looks like a lovely lunch.

    I’ve picked up packages of haloumi but have never brought one home as I was unsure of what to do with it. But now it’s on my list for my next trip to my favorite little store which has a lovely selection of cheeses. What a perfect spring-time recipe. =) Can’t wait to try it.
