Pear roquefort salad

With all that talk about cakes and pies and pancakes you might start to wonder what on earth happened to my Weight Watchers diet, but rest assured… I am still going strong and have lost 3 kilo in the first two weeks, so I am quite happy about that. Most of the cakes and pies we made have been given away to family and friends although I – ofcourse – had to taste some of it myself!! That actually turned out a bit too much but the damage has been limited… :) I’ve taken up sports again too and try to go to the gym three times a week for a spinning class or cardio session. And… I’ve ordered zumba dvd’s which should arrive today. I’ve heard so much about it, that I want to give it a try. Starting of in the privacy of my own home, as I don’t really want to embarrass myself publicly… haha!

So I am quite proud of my achievement sofar and I’ve been eating healthy and quite well in the process too. I think that is one of the good things about trying to lose weight; it gives me also another reason to spend hours going through cookbooks and thinking what I can create or adjust to suit my purpose. WW is extremely flexible and I love the fact that doing sports or other activities actually makes me gain extra points which I can then use to add – for instance – a lovely bit of roquefort to this gorgeous salad.

It’s a simple but tasty salad and you could easily substitute some of the ingredients or add others to it. The original did not call for tomatoes but I thought they would work really well here and they did. It added just an extra layer of juiciness to the mix. So wonderful lunch salad and if you’re worried about the roquefort; it’s worth the indulgence as without the saltiness and creaminess of the roquefort, this would be much less interesting.

SALAD WITH PEAR, ROQUEFORT AND CRISPY PARMAHAM

Yield: 4

Ingredients:

Lamb's lettuce, about 300/400 gr

4 pears, sliced

100 gr roquefort

4 slices of parmaham, approx. 50 gr

2 tbsp of pineseeds (I forgot to get those, so they are missing here)

cherry tomatoes

1 tbsp of olive oil

1 tbsp mustard

1 tbsp balsamico vinegar

lemon juice

peper

salt

Directions:

Divide the lamb's lettuce over four plates and add the slices of pear. Cut the roquefort into small pieces and divide those over the salad as well. Roast the pineseeds shortly in a hot pan and divide evenly across the four plates. Use the same frying pan to bake the slices of parmaham lightly. Leave them to drain on a kitchen towel. Cut the tomatoes into four and add to the salad.

Make the dressing by mixing the olive oil, mustard, balsamico and lemonjuice together and add peper and salt to taste. Sprinkle over the salad and finish off with a slice of parmaham.

    Beautiful salad and the pear-roquefort or gorgonzola pairing is perfect and something I’ve been thinking about lately now that autumn has set in. Congratulations on the diet! Yay! And you do know that tasting something you’ve baked just to make sure it is good before giving it to friends has no calories! It’s just part of the job!

    blue cheese and pears are a marriage made in heaven… then add the ham tomatoes and mache – amazing! I grew my own lambs lettuce (mache) this year because we cannot buy it anywhere here… and this was the first year I could get the seeds in a store. It took a long time to come up – but was absolutely worth it – and is very hardy once up.

    Pears and blue cheese are one of my favourite combinations. If you are not on a diet you can also add a bit of cured ham (jamon or prosciutto work well). Well done losing so much weight in two weeks!
