Pancakes with cranberries
I try not to look every 5 minutes or so but if one thing annoys me to no end,then that is the fact that I have no connection to the Internet. No that’s not correct I do have connection but all my websites are down.
If you’ve tried to access either Junglefrog cooking or De Glazen Vork this weekend then you probably wondered what the hell was going on. Well no one really knows as my hosting company Hostgator apparently didn’t think it was necessary to inform anyone what was happening. No email, nothing. Contact through the famous live chat didn’t get much more information other then ‘sorry for the inconvenience’ and ‘thanks for your patience’.
Rumor on the Internet has been going around that their server is hacked or was hacked. Which is a scary thought since all my information is on there. I don’t know if it’s true or not but in the absence of any information given one does start to wonder. Now I’ve had my share of issues in the past with sites being offline more then I care to remember but it seems that my move to hostgator was not a good one. I’ve been more offline since moving to them then ever before. The move was based on financial reasoning. They are cheap after all. I now know why…!
I’m still deciding where I will move to next. It’s down to two companies that feel good. The end decision will be soon, very soon. I hope that doesn’t mean I will get anymore down time but a little is probably unavoidable. Fingers crossed! I hate moving but staying is not an option either in my opinion.
Now since I couldn’t work on the new site design (moving all recipes to the new format is a bit of a pain) I had plenty of time to work in the garden and it is starting to look good I might add! And it was such a gorgeous weekend too! Which makes it double annoying that I had to spend some time solving hosting issues!
And because I was feeling sorry for myself I decided to make a little treat in between. Using my all time favorite book ratios again I came up with this delicious recipe for pancakes. Granted not the most spectacular but still the flavors are perfect for the beginning of autumn with the cinnamon and the cloves and a hint of cardamom.
I wanted these pancakes to be thick but if you want thinner ones you can add more milk or buttermilk. They were lovely airy with a little bit of crunch on the crust. These are best enjoyed straight out of the pan but cold they’re ok too… Delicious with fresh figs and a bit of honey.
What I’ve also been doing is working on making goat cheese for cheesepalooza! But more on that later even though I have to restrain myself from taking a peek…. ( it’s resting now for 12 long long hours before I can continue with it!)
Pancakes with cranberries and fresh figs
Yield: 2-3
Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
This batter is enough to make 8-9 small thick american style pancakes. If you want them to the thinner just add some more milk
Ingredients:
- 115 gr milk
- 115 gr buttermilk
- 2 large eggs
- 60 gr butter, melted
- 1 tsp vanilla extract
- 80 gr all purpose flour
- 40 gr rye flour
- 114 gr cornflour (yellow)
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground cardamom
- 60 gr dried cranberries, chopped
Directions:
- Combine all the wet ingredients and mix until well combined.
- Combine all the dry ingredients and mix these well too.
- Combine the wet and dry ingredients and mix until you are left with a smooth batter. At this point add the cranberries in it and stir to distribute these well.
- To bake the pancakes heat a frying pan over medium heat and put a bit of batter in the middle. Obviously the more you put in the bigger your pancakes will be.. ;) The amount of batter should get you about 8 pancakes

Such delicious looking pancakes and I love the addition of cardamon and other spices! Comfort food at its best! Hope the hosting problems get sorted out… I have yet to go down that path but am not ready to take that jump! Love the photographs.

Breathtaking action shot up top! The drizzle of honey is so luscious, and perfectly frozen in mid-motion. I’m honestly not the biggest fan of figs, but I would pluck these right off the pancakes in a second.

Oh… maybe not spectacular but… spectacular! What beautiful pancakes, so much thicker and fluffier than I can ever get mine. And I love the addition of mixed spices and dried cranberries! These are so autumny! I’d make these for lunch.
And please do not talk to me about blogs and websites. Ugh. Unless we can talk over a big stack of pancakes.
