Mozzarella & tomato sandwich with homemade pesto
Tom was out for work last night, so that is always my chance to make something to eat that he doesn’t like. I happen to live together with a guy who is not too fond of cheese… Unfortunately one of the things that I totally love! Most of the time it’s quite easy to solve though, so last night I set out to make something simple but delicious involving some kind of cheese. I had always wanted to try and make pesto myself, so that is what I did. I had bought fresh basil, pinenuts and a chunk of Parmesan cheese. The whole process didn’t take too long apart from the fact that grinding everything and then mixing it with the oil could have been a little better. It was quite chunky and although very tasty I will be trying it in some other ways for next time.
I had bought real buffalo mozzarella which is the most delicious one and roma tomatoes which are (at least here and at this particular time of the year) the best flavored ones. I baked some bread in the oven, made the sandwich and voila….!

Here is the recipe for the pesto (From “Jamie’s Kitchen”)

- 1/4 garlic clove
- 3 handsfull of fresh basil, chopped
- seasalt
- pineseeds, 1 small handfull, lightly roasted
- 1 large handfull of parmezan cheese
- extra virgine olive oil
- freshly ground black pepper
- if you like : drop of lemonjuice
- Rub the garlic and the basil together with a bit of salt in a jack or use a mixer or kitchen aid. If you want, take more garlic, but I always find 1/4 enough.
- Add the lightly roasted pineseeds and puree those too.
- Put the mixture in a bowl and add half of the grated parmezan cheese to it. Stir carefully and then add as much oil so that everything binds together and forms a nice, smooth thick substance.
- Add salt and pepper to taste and then the remaining cheese. Add a little more oil and try the taste. Keep adding cheese and oil untill you are satisfied with the thickness and the taste.
- Latestly you can add a drop of lemonjuice but this is not really necessary.

By the way; I know the first piece of mozzarella is a bit damaged and I stupidly enough did not pay attention when taking the photos…:(
