Lemon buttermilk pannacotta
I woke up this morning feeling a little sorry for myself… I’m having a nasty cold, so my eyes are watering, my nose is running (like crazy) and I look horrible… So a very good reason to feel sorry for myself. On top of that I had to do some grocery shopping since there was hardly anything left to eat in the house, other then my own homemade mayonnaise, but that doesn’t really have enough nutritional value to make me feel better, so I went out and got myself some nice (and very expensive) raspberries. It’s obviously not the raspberry season yet, so these are coming from Spain.
I had one of the desserts from last Friday’s Italian dinner leftover in the fridge waiting for me to eat and today was – of course – the perfect day for a little comfort food. I crushed the raspberries and added a tiny bit of sugar, which is really not necessary normally, but I just felt like having something sweet today.
Lemon buttermilk pannacotta
I just love the taste of these tiny little creamy wonders. I had made this before a while ago, so you can find the recipe here if you want to give it a try. I was a little hesitant at first because of the buttermilk in it. While I do love buttermilk I couldn’t really imagine how it would be. Due to the addition of lemon juice and lemon zest, it has already a lovely sour taste and the buttermilk just makes it complete. Can’t explain it, you have to try it. I really enjoyed my little dessert for lunch today, which did make me feel a little better. My nose is still running and my eyes tear up about every 5 minutes. You know that feeling when you have to sneeze really really bad, but then for whatever reason you can’t and that’s when you’re eyes start to run…
Ofcourse I also wanted to take a photo of my own mayonaise. I still had to season it, so I took a bit out of the huge jar and seasoned it with fresh parsley, lime, salt and pepper. I then like the effect of the mess the parsley had made on the chopping board so I used the same board as background. So it’s all natural!
Freshly made mayonaise with parsley, salt, pepper and lime
Just for those who want to make some – very cheap – and lovely mayonnaise here is the recipe:
| Homemade mayonnaise |
- splash of white vinegar
- 1 eggyolk
- 1 tsp of mustard
- sunflower oil
- salt
- pepper
- parsley
- lime
- Put a small splash of white vinegar in a bowl, add one egg yolk and some mustard. Stir those together until it starts to form bubbles on the surface. Then slowly start to add sunflower oil to it and keep stirring to make stir it all binds together. Once the mixture start to really bind you can start pouring the oil in a little faster and keep going until you think your mayonnaise has the right consistency. It’s as easy as that!
- Add finely chopped parsley, pepper, salt and lime to taste
Apart from the fattening aspect of mayonnaise I love it. Don’t you think mayonnaise is fabulous? And it goes with soooo many things… I just wish it was healthy too…:(

I hope you start feeling better soon! I love mayonnaise, but i usually make it with half olive oil, half vegetable oil. Nothing can beat home made mayo, especially on top of french fries…
Thanks Jo and Heidi! I think I will try different versions of the mayonaise for next time. I love olive oil, so that might be good to try for next time! O and yes, with home made french fries…. Talk about comfort food!
