Quick and simple tomato soup

Wow… I haven’t written anything new here since mid December I just noticed.. ;) Did you miss me? :) I decided to take a break of blogging and social media over Christmas and New Year. I’ve been so busy before that it almost became a chore instead of the fun it is supposed to be. So it was nice to not have to think about new posts, new recipes and the like. It also gave me a change to sit back and relax with friends and family and also think about goals for the new year. So that leaves me to first start with wishing all of you a fantastic 2013. With lots of laughter, love and good health.

One of those goals is going to be focusing on being more healthy. I know that will come as no surprise if you’ve followed my blog for a while as it is a recurring theme. That’s why I will not be bothering you too much with it here but all the details you will be able to find on my – more personal – blog Scribbles and Notes. Here I will just keep on sharing delicious new recipes! And well, yes they might actually be a bit more healthy then all the baking we did in the last months!

So to start the New Year off I have this delicious recipe which is literally a new minutes to put together, tastes great and is healthy too. Expect to see a lot more of those! I’ve also become quite addicted to Jamie’s new cookbook; Jamie’s 15-Minute Meals. Maybe they are not really 15 minutes but even with 20 or 30 minutes they are absolutely perfect for healthy and quick midweek meals. I’ve decided to try all of the recipes! Done 5 sofar and all of them were totally delicious! That really is a recommendation if you’re looking for great recipes.

Tomato soup

Very quick tomato soup

Yield: 2

Cook Time: 10 min

Total Time: 10 mins

Absolutely perfect and quick meal for when you have no time to cook but still want to eat a nice meal.

Ingredients:

  •  400 gr can of tomato cubes
  • splash of tabasco
  • worcestershire sauce
  • 100 ml vegetable stock
  • creme fraiche (light if you want)
  • basil
  • salt
  • pepper

Directions:

Put the tomato cubes in a saucepan. Add a splash of tabasco and a splash of worcestershire sauce. Add the stock and season to taste with salt and pepper. Heat the pan until it is hot enough and then puree with a stickblender till smooth. You can add the creme fraiche and stir it through or put a dollop of it on top of the soup when serving. Garnish with some fresh basil and serve with crusty bread.

    Happy New Year! May the year just started bring most everything you desire! Lovely light soup I can actually make by just walking out to my tomato plants which are bearing way ahead of my usage :) ! Just so very much wanted to agree about Jamie’s 15-minute meals. We have 4 TV episodes screened every week at the moment: loved the recipes, bought the book – I actually have most of his [yep, another cookery book fanatic :) !], but I find this BY FAR the most usable: OK, am tweaking a few to make the cooking process shorter, but they are, on the whole, healthy and SO much practical fun!!!

      I know! It’s just such a perfect book for busy days as it allows you to not even have to think about what to make. I check my fridge contents, find a recipe that uses some of it, buy maybe one or two extras and we have a fabulous meal on the table. And indeed healthy, quick and delicious… I do love Jamie! :)

    This soup is lovely! Eating healthily is very important and you feel a lot better when your diet is balanced…. A great decision!

    What a beautiful soup, Simone! I think that I will have to eat me a lot of light dishes such as this one when the Holidays are over. I have been such a “bad” girl, indulging in all sorts of “nasties” and I have gained tons of weight in no time at all! Will have to work hard in January to get rid of all that.

    I’ll keep this soup in mind for a light lunch!

    And I totally hear you about the blog becoming a chore. I was in this exact same position, that’s why I too decided to take it easy over the Holiday period. For me, it’s always been a time when I pull the plug and do and eat as I please, when I please. That’s what I did this year and it feels sooooo good. Now I look forward to start blogging again! :)

    Oh, and by the way, I LOVE your new site. The theme is so pretty. If I hadn’t paid tons of money to get my site redesigned, I think I would’ve have used it too! I’m bookmarking it still, in case I ever decide to start a second blog…

    Gee, feels like I’m writing a novel here… sorry about that! Just one more thing… I can’t possibly leave here without wishing you a very happy and super healthy 2013. :)

    Good soup – I make one somewhat similar, although I sometimes use chicken stock or (occasionally) beef stock. And yes, I did miss you. ;-) Happy New Year!

    Happy New Year to you, sweet Simone! Every once in a while it’s good to take a break (I should not talk about breaks because I take several, for weeks, every month lol). You regaled us with such beautiful cakes and holiday treats up until mid – December, so you more than deserved it! I love that this tomato soup is so healthy – it looks rich, comforting and delicious! The photos, as always, just blow me away! That said..I stopped making resolutions years ago because one is always ‘eat healthier, and I never do!! Oh, well..maybe I will without a resolution!
