		<description>Simone, that salad looks abolsutely fabulous, and your photos just awe me..so incredibly beautiful!  Would you believe I JUST started liking beets several months ago??  It&#039;s so strange since my palate matured/expanded from the time I was in college, and there isn&#039;t much I don&#039;t lik...yet beets were one veg I just couldn&#039;t get into.  Now I love them, so I&#039;m looking forward to your beet entry too!

That said, I&#039;m in NYC and the surrounding areas, so not being able to find at least some fresh pomegranates or frozen seeds &#039;anywhere&#039; is mind boggling!  Then again, I can&#039;t get out there myself due to my injury, but I did call tons of places - including middle eastern specialty markets - and not one had anything other than pomegranate juice!  SO weird!</description>
