 The heat has struck again here and guess what I decided to do this afternoon? Remove all the weed from the garden! Really a fabulous idea when the temperatures are soaring way above 30 (can’t really tell exact numbers… I don’t have a termometer in the garden) but at least it’s starting to look like...

Isn’t this bliss? We are fortunate enough to get very good mangoes here and in abundance during the season and very inexpensive too. So i have stopped whining about all the varieties I don’t and used to back home in India. I didn’t know that there are so many types of pancakes Simone! I think the first couple of pancakes are always too pale, but then the pan reaches the right temperature and the rest usually come out a good colour. I really like your new site. I have a smaller screen and it looks perfect. [Reply]

In North America – these are not called pancakes. A pancake is a lot smaller and fatter. These are called crepes in Canada, due to our French founding fathers. But, certainly, so many countries have a version of this great big flat pancake it is difficult for me to tell the difference when I travel… combined with the fact that what I buy may not be authentic, it is really tough. How is this different than a French crepe or a Balkan palacinka? The North American pancake is definitely not foldable. I was so confused to see this word in English and then find a crepe. But, I have learned. Maybe the difference is in the texture from the Blinz to your “pancake”? How do the recipes and technique differ? I find the Balkan palacinka is quite spongy in texture and the French crepe, as I know it, more dry. I would love to have the differences in these ethnic treats explained to me, too! Love that you are doing this cooking tour! [Reply] Simone (junglefrog) Reply: I think here in Holland, we simple just call them “pannenkoeken” or “crepes” which translates into pancakes. I know the ‘pancake’ in the US is the small and thick little one and we just call those “american pancakes”. But as you’re saying; I think a lot of the pancakes or crepes or whatever you call them around the world are fairly similar… Didn’t know there was a Balkan Palacinka… Gotta look that up too! [Reply]

A blitz is indeed simply a pancake but what makes it a blitz, in my Jewish opinion, is the filling! I am used to that good old traditional cheese blintz, tangy and not too sweet, smothered under a warm fruit sauce. Or filled with cooked fruit. I would also assume that, like many dishes that have evolved, it is indeed Jewish but brought from Russia with the Jews who immigrated west. According to Claudia Roden, the blintz is in fact of Hungarian origin. But aside from that, yours are perfect! I have never hear of a Tian… until now. It does look beautiful, and the idea sounds tempting… and though you say it is straightforward, it looks like there are too many steps in it for me. I think that is because I am not a fan of orange desserts. I am a fan of creamy desserts and a really good marmalade, though. Love that you took the time to do it even though you missed the challenge date. Personally, I don’t know how you have time to live your life with all of the cooking and writing and photography you do. I have difficulty getting my few posts out and keeping up with others and my list of “to do’s” and “want to make” just grwos and grows… but, I can certainly say I admire your work, your energy and your information – ALWAYS. Those look absolutely delicious. I love smoked salmon on anything. In fact I just posted a similar thing, but instead of blinis, oat cakes. I think smoked salmon really is a spring kind of food. The last time I made blinis was the first time. I made them for our wedding. Buckwheat blinis with creme fraiche and three caviars. I still remember how luxurious they were. I loved them… but they are also a considerable amount of work as I like to see them like yours… similar in size. Thanks for the reminder. I will have to put this back on my appetizer list and try your recipe next. [Reply]

Ok, this look good and everything, but please don’t call these “blinis” becasue they are not. Also, the word “blini” is already plural, no need to say bliniS. Blini look like crepes, period, there is no regional variations whatsoever. If you were to look up crepes, you would not see pancake looking things. Same with blini. The batter use for blini is totaly different as well. These are pancakes and they are not going to turn into blini if you put some salmon with sour cream on them.
